How We Make Our EVOO (Extra Virgin Olive Oil)

  1. SELECTION
    o The journey begins in the campo (olive grove), where we connect with the farmer, the land, the trees, and the olives themselves.
    o This step is essential—it's where we assess the farming methods and practices to ensure alignment with our values for sustainability and quality.
  2. CULTIVATING
    o Every olive is carefully inspected and harvested in harmony with the unique environment of the campo.
    o We hand-pick the olives to preserve their integrity, ensuring only the best fruit is selected.o Once harvested, the olives are transported directly to the frantoio (processing plant by the farmer to maintain freshness.
    o Before processing, the equipment is cleaned to avoid any contamination.
  3. PROCESSING
    o Upon arrival, the olive batches are processed under the close supervision of the farmer.
    o The olives are thoroughly cleaned, removing any leaves, twigs, or dust, ensuring only the purest olives go into the oil.
  4. CRUSHING
    o The olives are then crushed into a smooth paste, gently releasing their rich oils. This step blends traditional techniques with modern methods, respecting the fruit while unlocking its full potential.
  5. MIXING & SEPARATION
    o The olive paste is carefully mixed in a slow, controlled process called malaxation. This helps the tiny oil droplets merge, enhancing the flavor and aroma of the oil.
    o Next, the oil is separated from the paste using an eco-friendly, natural process, leaving behind pure, golden extra virgin olive oil—packed with flavor and nutrients, ready for your table.
  6. BOTTLING
    o Finally, under the watchful eye of the farmer, our EVOO is poured and sealed into canisters, ready to be enjoyed at your table.
